Production
To 1941 was Jack Daniel's whiskey as bourbon, because the government refused for a separate definition of Tennessee whiskey. But defining concept or not, the production of Jack Daniel's will for generations run the same constant. A total of four fermentation tanks supplied with four Beer Stills fermenting liquid. This is then Still according to the column procedure once burned. To those Beer Stills indeed a Thumper or Doppler is connected, but this heater is supplied only with hot steam from the beer. Result of the one distillation is a characteristic oiliness of the Jack Daniel's whiskey. Up to this point can be found in the resulting distillate is still no difference to a Bourbon Whiskey. By Jack Daniel early on and applied by the government in 1941 recognized as a patent, the Charcoal Mellowing process enables the Rohde distillates vermildern to where it filters out unwanted substances. The Charcoal Mellowing process is rarely still referred to as the Lincoln County Process. In this Filtratitionsmethode preferred to use wood logs from local maple. This is stacked in layers auffeinander crosswise. This special layer construction allows the burning of the wood out of the center, the logs together and not fall outward away. Those logs are then filled into large containers, through which one can now dribble the crude distillate. The charred pieces of wood, with a total height of 3.6 meters, and taking down white wool result in leaching of various substances from the distillate and give him an individual clemency.
But this process is what a Tennessee Whiskey (there are does it only Jack Daniel's and George Dickel) differ from a Bourbon Whiskey. Geographical factors play only a minor role here, since Bourbon must be burned in any state, even in Tennessee.
